It's completely upto you really, some people like to write code side by side on the other hand some like to just concentrate on the videos so that they can grasp everything. At the end, only 1 thing matters, do you know what you are doing? Workspaces won't count thereit's just a tool to practice and learn. Although, you cannot learn without actually writing code, you can understand the concept and make something on your own--that would be very beneficial. So, I guess it's up to you, how you wanna use workspaces and you don't have to edit all your work either(again your wish).

What I personally do is, watch and understand all the concepts covered in the video and make something on my own in codepen based on those same concepts.

It's not like I don't use workspaces at all but rarely.

Codepen is just a tool for you to write html, css and js code and it's pretty nice as well. Sign up and start playing with it :+1:

Check it out: http://codepen.io/

Here's mine, you can get the idea how it works mine .Don't worry, it's not complicated at all.
