If I were to hire an app developer would they get a percentage in whatever i make from that app? Also would they get any say in what I do with that idea from there? How am I protected to know they wont take the idea and run themselves?

as far as percentage, it is totally up to you if you give them a cut in the profits, most developers normally don't, they do a fee for the project then leave it to you to manage and profit from. they normally honestly don't care if you succeed, they normally take their cut and get our of there. So after hiring a developer, they commonly won't take a cut and don't put in much say, they will here and there give recommendations on design aspects but certainly nothing on how to run it.
For making sure they don't take your idea, ALWAYS make your developer sign a non-disclosure agreement so they can't take your idea. Give them the basic idea (ie. it's a fitness app, the developer should know iOS development along with how to set up the backend) but don't send them every detail of it 'til they sign one.
