Changing the CSS/JS files but still using min files in the end?

In the video Dave tells us to hold on to the normal CSS/JS files if we plan on making any changes to them. Shortly after, he says that you will want to use the minified files in you project. Once you change the original css files/js files would they be automatically updated in the minified files? Or is there a way that we have to minify the updated CSS/JS files ourselves?
