How does he come with the values for the margins/padding etc so easy for the lessons?

In this special case, I'd say preparation. Apart from that it's plain routine. At a certain point you get a feeling for which values will look good. Up until then it's just trial and error: Take any value you think will look good, check the result and if need be modify.
