Don't have idea what is he talking about

I am lost with this video. Somehow course beginning is confusing. Terms, methods feel detached. Also seems like there is not step by step methods. The course starts with empathy map for the already existing project? Most of UX designers start with blank slate, the project that needs to be defined.....

Each video is the step by step method and check the "further reading section" at the bottom of each video its really helped to understand more.
