Is a Migration something like a git commit for the model.

Not quite. a git commit would just store the model itself in the repository. But a migration uses the model to create or change the database.

So it's basicly even more than just a snapshot or a commit

My point was that it's different, and a source control system is perhaps not a good basis for comparison.
