Email backup and organization

Let's say you have multiple email addresses (Yahoo, Gmail, Hotmail, etc.), what's the best email client (Free and Paid) for handling all your emails and how to back them all up?

If you are a website owner, do you exclusively use your webhost's webmail or do you direct your emails to the likes of Gmail? The downside I can think of by directing your email from your webhost's server to the likes of Gmail is that filtered spam (may or may not be spam) emails are not being fetched.

I have several emails from various old accounts and new projects, and I just forward them to two Gmails (keeps them organized) and those I just forward to my phone, so email is never an issue for me.
