Foursquare API: How to get number of countries a user has visited?

I would like to create some sort of "travel" app that lets me know the number of countries a person has visited. However when I look into the foursquare API, country seems to be in many different "branches" of the object tree.

This is the endpoint I am trying to use:

https://developer.foursquare.com/docs/explore#req=users/self/checkins

Ideally I would like to use some sort of "for" loop that captures each country for an specific user. Is this doable? I am using javascript/jquery/ajax to create this app.
