Say - What happens if studio press updates a child theme you are currently using... would you lose your styles and functions if you update to the new child theme version?

Negative, only the parent theme ever gets updated by the authors. Since you have created the child theme yourself, you never need to worry about it getting changed, unless you change it yourself.
