How do I make the brush black to hide?

I'm trying to follow along on this but my brush is just painting the areas I select black, instead of removing the content.

Watching closely on the vide when she says "back to hide, white to show" I can see the colour change to black on her screen over on the right hand side underneath "Swatches" in the "Character" settings area. I'm guessing this is my problem.

I don't have that area on my setup and can't figure out how to get it loaded.

I'm using the latest release trial version of PS downloaded from Creative Cloud.
