On a Mac to take a screen shot: hold down 'command'+'shift'+'4' and drag the mouse around the area you want to take a screen shot of. For a PC (I googled this so I'm not 100% on the accuracy): Click the window you want to capture. hold 'Alt'+'Print Screen'.
As for highlighting the mouse: I was wondering about that too, so looked it up. From what I found, it's a program you can download to the computer (don't you think it should be an included short cut!). Here's a discussion about it for Macs anyway.
