Everything in the HTML course is correct but there's far too much to cover in a dozen courses.

However you can get most of what you will use day-to-day if you go through the Treehouse HTML course and then check out the Tuts Plus HTML5 and You blog series.

The HTML deep dive gives you a good overview of HTML but the full specifications for each version can be found on the W3C website i.e HTML5 http://www.w3.org/TR/html5/. Keep in mind that each website browser renders HTML slightly differently so you will need to test and do research to find out more about these quirks.
