i don't understand creating classes video

Why did he make a new variable of the class

Do you mean the;

PezDispenser dispenser = new PezDispenser();

line? If so, then he is creating an object here. This would be a PezDispenser object and you would access it using 'dispenser'. I do believe this is covered more indepth later in the Java Objects course, so don't panic if you don't understand it right off the bat.
