I would appreciate if someone could elaborate on the last step in image tracing.. i.e., 5:48 onwards.

The section from 5:48 onwards was a little hard to understand. Why do we need to delete paths?

This because you created paths/object without a stroke or fill color (invisible in regular view mode) during the process of making the astronaut. By selecting just the black colored art you want, this cleans up your paths and drawing.

If you kept these invisible paths they will take up memory and if later on want to do more editing they may become a problem making strange results that you're not expecting...just get in the habit of removing these invisible paths/objects.
