If I switch a track will I lose all previous credit from the completed courses inside original track?

Additionally, can I have have multiple track active at once? Is "switch" track different then "Leave" track

No, you will not. I've skipped tracks at least 5 times and none of the data was lost. :)

Also, I believe only one track can be active at any given time (sorry, I didn't see this part of your question). "Switching" tracks and "Leaving" tracks have a different connotation, but it's not really much of a difference because regardless of whether you switch to another track or leave a given track, all the data will remain as it was previously. The only thing that matters is this: certain courses will be unavailable unless you have joined a track.
