Because I can't but a fill colour on anymore for the shape ?

You can change the outline stroke of lines or shapes at any time by one of two methods:
With the object selected, change the fill/stroke colors in the upper lefthand corner of the illustrator window, or set the stroke to 0 pt.
With the object selected, expand the appearance panel, and edit the stroke properties.
