Java Persistence?Deploy able?

So you can't deploy a mysql database with you jar file, so I tried Derby and found it to be a real hassle to use as it doesn't make a ton of sense and the documentation seems confusing as hell. Any suggestion on a deploy able means of persisting numerous different objects? How would you do it?
