Managing your projects - Documenting and organizing resources

Hello,

I was wondering if there are any courses about writing documentation for your code, API or project. How do you manage big projects? Do you only document your code where necessary or do you write stuff down in a seperate document. I know with git you can add a comment when you commit something, but I'm guessing that's not the place nor the way to document things?
