Modify an unlocked Android smartphone

Hey guys

I unlocked my smartphone (HTC One M7) a few days ago and - as many of you know - can't install any OTAs anymore. I wasn't aware of that before I unlocked my phone. Now since I am new to all this stuff I'd like to ask if there is a possibility to receive and install OTAs again. In case there is no other option I'd like to ask how to install custom ROMs.

I hope you can help me out a little (:
