Modify customer details, on email templates

Im not able to find anywere were to modify the customer details that are in between email-addresses.php & new-order.php. It doesnt look like there is an specific file. I will like to add the full name on customer details and at the moment only shows email and phone (by default).

I found on new-order.php a hook woocommerce_email_customer_details.. but searching for this hook Im not able to find any function anywere..

Any ideas? I will really appreciate some directions
