NSString

Why dont we use NSString to assign a new label but use .text property?

I think the property of the UILabel class instance called .text is exepcting a string so it doesn't need defining explicitly. If you wanted to create the string first, then assign it to the .text property, you'd need to use the correct type which may be NSString.
