Ruby or PHP?

Which language would be the most useful to know?

Depends on your goals....

If you want a job, I would say more employers are looking for PHP;

If you are wanting to learn to code for your own projects, then I would say Ruby.

I haven't taken the dive into Ruby yet but, have been told that it is easy to learn and the reason it is used as a building block for other languages.

I have been advised to learn Ruby next. Both Ruby and PHP are used on the server side of web applications. If your goal is to become employable, then you should have an understanding of both. But, In my case, it seems that Ruby is more in demand.
