Is there a way to undo a ! without have to retype the variable?

No.

The bang (!) in Ruby is an expression which returns a boolean value. This boolean value knows nothing of how it came into the world, so there is no un-bang method which will undo it. You will need to retype the variable to use it elsewhere.
