Currently I am on the iOS track. I want to scoot over to Development tools and do some GIT work. If I leave iOS I can come back to it later yes?

12,271 PointsYes, you can, as long as you have completed a stage it will save it and when you return, it will start you on the next one.

39,199 PointsYes your progress is tracked at the course level so any progress you've made in the iOS track you'll get credit for in any other track.
It's worth noting that there isn't a "Development Tools" track there is however a Library category. The most straight forward thing would be go to Git Basics course in the library and click on the plus sign" to add it to your *home screen.
