Going through the iOS track the first few courses (swift basics, collections and flows and functions) were nicely introduced , easy to understand. Then comes Object-Oriented swift and its like what the F*** is this :( . Im looking at the methods video and i do not have a slightest clue what is going on.

Methods, Classes, objects instances and other such things tend to be what people new to programming struggle with most so you don't need to feel bad about being confused.
