iOS Build a Simple iPhone App with Swift View Controllers and Views Designing With Interface Builder

The emulator does not seem to be working correctly

The text is not showing up, and the screen is much bigger then the size of the device I selected.

I'm not sure about the first part, but if you have the simulator open you can go to the top menu and select Window, go down to Scale and then pick the size you want. That will hopefully allow you to shrink the size of the device.

Even if Xcode runs on your Mac, the speed of your hardware varies a lot. Running Xcode 8 on a MacBook Pro 13" 2009 vs a MacBook Pro 15" 2011 is a night and day difference to the emulator showing up and running.
