Trouble understanding middlewares

I've read numerous amount of posts about it, yet I'm still confused about it's usage and exact defintion.

Took this from a stackoverflow post, but

For example in:

app.get('/wat', function (req,res) {
   res.send('Hello');
});

What is the purpose of adding a middleware here?

app.use('/wat',function(req, res,next) {
    res.send('Hello');
    next();
});
