What does "building a business that is scalable" mean?

I hear the word scalability all the time. What does it mean in laments term?

Scalable basically means 'room to grow'.

Say you own a small hotdog stand and sell about 50 hotdogs a day. Then one day someone writes a newspaper article about how awesome your hotdogs are. Suddenly thousands of people are lining up to try your hotdogs. Do you have the ingredients, equipment and manpower needed to produce several thousand more hotdogs each day? I.e Can your business 'scale up' to meet this new demand? - Probably not if its just you and your small stand, and you hadn't planned for it. Therefore your business is not 'scalable'.
