My first personal goal is to create a private server that can track clients and payments all in one place for a business. So not only would it be able to track how much a client "owes," but also would be able to process the payment straight from the server. The second goal would then be to integrate software and apps to access that information. What language would be the best to learn in order to accomplish that kind of server functionality? I am looking at all the courses and there are so many and I'm not exactly sure I know where to begin or start... Can someone help who knows a little bit more about what each language can do?

In short, if you're looking to work on the server-side and deal with databases and payment processing and the like, you'll want to learn a server-side language like PHP, Python, or Ruby. Treehouse offers multiple courses on each of these languages, and they would definitely be the place to start.
Of the three, I have not taken many of the Python or Ruby courses, so I am not 100% sure on if the classes offered here yet handle things of that particular nature, but I can tell you from experience that they have PHP courses that walk you through creating an e-commerce t-shirt selling website, which will include connectivity to databases and integrating shopping carts via PayPal.
