Why create outline then expand appearance when expand appearance alone bring the final result?

Hi, in the last part of the lesson, Matt says with text we need to create outline then expand appearance but when I play around with the options in Outline mode, I can see no difference between the end result of outline -> expand appearance and just expand appearance (skip the create outline step). If there is a difference, please can someone show me? Thanks a lot.
