WHY does he use merge at the end of this video

I reallly don't understand why does he use create OUTLINE on the text and use merge !!!

If you're sending the design off to someone you'll want to compress the file down to 1 layer and create outlines of the type so that whoever gets the file won't have to have the font's you've chosen installed and it's easier to open. Makes it easier for the print shops.

There's a few main reasons for merging. One is because it makes the file smaller. Another is that any format you use to send it to the client is going to merge it anyway & the effects aren't always the same. Plus, it makes it harder for them to edit & do something screwy to your design. Web formats are all single layers, too.
