This is likely bias since I work for a Magento oriented company, but there seems to be an overall lack of structured Magento course-ware out there. The classes offered by Magento are expensive and a majority of the how-to material is simply covering installation and manual modifications in the Admin Panel.
You could fill this niche. :P
