Yes you can use an editor like sublime. The result will be the same :-) .

There are some sections where using Workspaces will be easier (such as AJAX where Workspaces has some server-side functionality built in specifically for the lesson that a standard editor won't have but the teacher makes you aware of that) but in general, absolutely! I've found it's much easier to have my own editor to use and then I can customize my lesson notes and save them to GitHub for a reference I can go back to.
