Can we edit a docker app after it's already in a container?

Yes you can modify (almost) anything inside a container. But if you don't persist your changes/data, you will lose all your modifications if you kill the container. One might start a container interactive with "docker run --interactive --tty" to get into the containers shell. Just google for it, there are several articles about that toppic.
