Instead of adding a custom page, can you do the same things with just a regular page?

If you're asking if you can add custom fields to normal pages, yes :)

You would setup your fields the same way as the video shows, but then when you select what post type to apply the fields to you can select page or post instead of your custom post type.

I believe the video talks about custom post types and fields. Pages are one of the default post types.

All regular pages will belong to the post type "Pages". If that is ok, for example if you just want an "About Me" page, there is no need to do a custom post type.
