External Stylesheets: One or Many?

When working on portfolio websites and developing websites in general, is it better to use an external stylesheet for each page or one stylesheet for the entire site?

It makes sense to use different sheets for specific purposes. But if you're talking about code that establishes a basic site-wide appearance it would be preferable to keep this code in a single file. This would simplify making any site-wide changes.
