How do I save those changes?

Okay, I want that label, amongst other elements, to be right. How can I focus on just that label and not on the everything else?

If you have troubles selecting an object directly on the layout (that is often the case : objects can be over other ones), you can select it on the left section "View controller scene". You just click on the object you want, and then it is selected on the layout either.
