How does one design & present animations?

I find this difficult to present in mocks. A transition from one screen to another can involve various animated steps and gestures. What's a good way to present this?

Could you make it a gif using something like Photoshop?

Use Quicktimes screen recording to record yourself preforming the action. Then simply add the video to your presentation, or turn it in to a gif in Photoshop.
