HTML/PHP contact form sends emails from host, not "noreply@..."?

I'm fairly new to contact forms, but I got an HTML/AJAX/PHP one working via a Treehouse tutorial.

THE PROBLEM: My website sends emails from "example@gator3014.hostgator.com" instead of from "noreply@example.com".

I'm sure there's a small step I'm missing, but I can't figure out what. Any ideas?
