You should do this

bool levelFinished;
int rubies=0;
int rubyReward=7;
int rubyMax=50;
while(rubies<rubyMax){
      rubies += rubyReward;
}
levelFinished=true;

To increment a variable, you should use += And is not necessary to explicit int, do it just the first time you declare the variable

Also you can do this

      rubies = rubies + rubyReward;

is the same as

      rubies += rubyReward;
