I'm hoping have my own start up social media and growing it into something bigger so ruby/java/python/php?

I know ruby can be good for start ups but, is it hard to change to something else once we're established? I want something long term that I can expand. Is it worth going with ruby for the speedy start?

No. Especially since you said "we", but don't try to fix problems that you don't already have. Technologies change so rapidly and if you were to take off, you'll have the resources to grow.

Honestly its up to you. If you already are familiar with one of these languages, use it. If you aren't, Ruby/Rails is a great option.
