Is there more that can be done here?

Is this all that's possible to be done with customising the Static Front Page display or is it beyond the scope of the course :)

You can infinitely customize a WordPress static front page, so I imagine they didn't want to make the video too overwhelming.

All of the customization can be handled in the front-page.php template file, but you could also set up some new options for the Customizer with its API. Here are a couple Codex resources that could be helpful:
