My GitHub doesn't function like this

My GitHub Desktop version doesn't allow me to create a README when creating a new repository or have the other items to toggle. Have things changed? It's kinda awkward trying to follow along when what she's saying isn't something I can do on my platform.

I had a similar issue, and just decided to use the web version. I find it easier to navigate, everything syncs well, and it looks the same on my macbook as it does on my pc.

It's different, but I managed to figure out how to use the desktop version despite the videos instructions. Glad you found the web version easy to navigate though!
