How would one use Next and Previous buttons instead of a label for each input?

You could do it with JavaScript, but this particular script-free technique relies on the unique way labels can be associated with buttons, and using hidden buttons to trigger the background changes. If you wanted that feature, you might be better off implementing the whole thing with JavaScript.

The good news is that is a typical feature of the common JavaScript carousels that are readily found online.
