If anyone else experiences this, it is possible that all of the channels weren't automatically added for you upon adding the Slack workspace.

In the left sidebar, where it actually says "Channels" above the available channels, hovering over this, a + sign will appear on the right side of the word. Hovering over this says "Add Channels". Click that, then choose "Browse Channels".

Similarly you can go to "Go" in the top menu bar, then "Channel Browser". This opens a page with all available channels in that Slack workspace and you can click the "Join" button on the right side of each channel you'd like to join.
