I have paused my subscription on Treehouse for the past few months since I started college. I am looking to get back into iOS Development and ultimately become an iOS Developer. I previously learned Swift 2, however a lot has changed, and thus I will need to redo quite a bit. What tracks would "you" recommend for me to be very well-rounded in iOS Development and job-ready? (I am of course well aware that making my own side projects will also help).

Hi Ryan Minnick,

I would suggest enroll in the iOS tech degree .. If you're not ready to invest in yourself to that level just yet, take a look at the curriculum (listed on that page) and look at all the courses and workshops listed. They are listed in order left -> right, then working down the page. You can't go wrong following that plan.
