Select options on the shop page?

Is there a way to set it up so that the options can be chosen on the shop page and not have to go to the product page?

There isn't a setting in WooCommerce which would allow you to quickly turn this feature on/off. It is possible to do what you ask but not without modifying core templates and writing a bit of extra code.
