Is it best/common practice to use capital letters in the statements?

I see him use capital letters, but I can execute the statements just fine using normal letters.

SQL keywords don't have to be capitalized, but it's a common convention. Some people think it helps readability - especially since editors didn't have color coding back in the "olden days".
