I'm just beginning the PHP Development Track and I'm on the video of structure build. He instructs you to include a pipe (in his example it's 'Nick P | Designer'), but I'm just wondering, is the Pipe required or is it just personal preference?

It is just a most common suffix people use for title. Just remember anything on title would be keywords for Google to search. Keet your title shorter than 65 characters. And unique for every page.
