As the 1-click install obviously takes less time is less likely to have screw-ups while setting it up, why would one choose to go the 5-minute install route? I don't recall that being covered. Thanks!

The key advantage is customization, especially if your hosting needs involves separating a Wordpress installation from other web applications involving the the same domain or account.
The default database settings and other defaults of the 1-click install associated with databases can be problematic for some people, especially if the domain is already active.
